I always love Spring; I love the colors, the blooms and the ability to visit outdoor farmers markets on Saturday mornings. There is something so relaxing about strolling the aisles outside in the sunshine and selecting the freshest produce possible.
We all know that eating our fruits and veggies is beneficial to our bodies and it can be a tricky endeavor. But as the weather is becoming friendlier, the opportunity for delicious produce is here.
If you are looking to add some Springtime goodies to your meals, here are some delicious fruits and vegetables to add to the menu. You can also make a day of it and take the kiddos to your local market; they will get a kick out of helping pick out the yummy fresh treats.
Sure, depending on where you live you may get some of these year round. But for the best, juiciest, most flavorful treat, picking them during their peak growing time is best.
Veggies that are Best in the Spring
Asparagus, the perfect companion veggie. Try grilling it with some olive oil, lemon zest, and garlic.
Carrots are perfect for a Saturday playdate snack. Slice them up or get the baby carrot version and you have a great snack to enjoy on the go.
Radishes– Raw radishes add a sharp crunch to salads, relishes, and burgers. Cooked, they have a more savory flavor with just a hint of bite remaining–choose your favorite style or buy a couple of bunches and try a few.
Spinach, is there a more perfect ingredient for a delightful spring salad? I think not, just make sure you check your teeth before talking to strangers.
Vidalia Onions, these are my most favorite of all the onions. If you aren’t a friend of their stronger more bitter counterparts, you will love these guys. Slice them up thick and throw them on the grill for a savory side dish.
Tasty Spring Fruits
Apricots, need a dessert that will make your family erect monuments in your honor? Try searing apricots with butter and cinnamon topped with chopped walnuts.
Cherries, eat by the handfuls or try something new. This recipe is perfect for an outside gathering or just because it is delicious. Cherries baked with thyme make a sensational topping for thick slices of toast slathered with fresh goat cheese.
Grapefruit can be rather dull, but slice up some avocado to pair with it and top it with a citrus vinaigrette, whammo a happy, healthy salad.
Lemons may be added to a myriad of dishes. But an easy way to get a quick healthy kick, squeeze some fresh lemon into your water. It’s almost like you are at the spa… Almost.
Strawberries one of my favorite fruits not only because they are yummy but because they smell so good. Pack some along for your camping trip and put a new spin on an old favorite with campfire strawberries. Trade the marshmallows for some marshmallow fluff, and presto a healthy fun camp treat. To make this delectable, put your strawberry on the end of a roasting stick slather some fluff on there and lightly toast.
